Köpük

Also known as Turkish coffee foam, kaimaki

What is köpük in coffee?

Köpük is the Turkish word for the thick foam on top of Turkish coffee. It forms when powder-fine coffee is heated slowly from cold water in a cezve, and it is a sign of a well-made cup. Boiling the coffee destroys it.

In Greek coffee the same foam is called kaimaki. See Turkish coffee for the method.
