Acidity
What is acidity in coffee?
Acidity in coffee is the bright, lively, juicy quality you taste on the tongue, like the tang of fruit. It is a prized trait, especially in lightly roasted specialty coffee. Pleasant acidity is different from sourness, which usually means the coffee is under-extracted and needs a finer grind or hotter water.
Lighter roasts keep more acidity; darker roasts taste less acidic and more bitter. Coffees from high-altitude farms, such as many from Kenya and Ethiopia, are known for their acidity.
