Agitation
What is agitation in coffee?
Agitation is any movement of the coffee and water during brewing, such as stirring, swirling or a turbulent pour. It increases extraction by moving fresh water past the grounds. More agitation brews faster and stronger; too much can clog a filter and slow drainage.
Swirling a V60 at the end of a brew is a gentle form of agitation that flattens the coffee bed.
