Cold & Iced

Cold methods either extract slowly at low temperature over many hours, as cold brew and Kyoto slow drip do, or brew hot coffee straight onto ice to lock in aroma, as Japanese iced coffee does. Cold extraction gives a smooth, lower-acidity cup.

What is the difference between cold brew and iced coffee?

Cold brew steeps coffee in cold or room-temperature water for 12–24 hours, giving a smooth, low-acidity drink. Iced coffee, especially Japanese-style flash brew, is brewed hot directly onto ice in a few minutes, keeping more bright acidity and aroma.
