Bypass

What is bypass in coffee?

Bypass is brew water that flows around the coffee bed instead of through it, for example down the sides of a filter, so it reaches the cup without extracting much flavour. Too much bypass makes coffee weak and thin. Pouring over the coffee bed rather than onto the filter paper reduces it.

Some batch brewers add bypass on purpose, diluting a strong brew with hot water to fine-tune strength. In a V60 it is usually something to avoid.
