Drawdown

Also known as draw down

What is drawdown in coffee?

Drawdown is the final stage of a pour-over brew, when you have stopped pouring and the remaining water drains through the coffee bed. How long it takes is a useful clue: a very slow drawdown usually means the grind is too fine, and a very fast one means it is too coarse.

On a V60, a typical 15 g brew finishes its drawdown at around 3:00 to 3:30. A drawdown that stalls, with water sitting on top of the bed, is often caused by fines clogging the paper filter.
