Apaneca-Ilamatepec is the heart of Salvadoran coffee. This chain of volcanoes in the west of the country, running through Santa Ana, Ahuachapán and Sonsonate, holds about half of El Salvador’s coffee land and grows more than half of its coffee, under shade, from the lowlands up to 2,365 metres. It is where the Pacas variety was found, and its high farms win many of the country’s top prizes.

- Pacas was found near Santa Ana in 1949.
- 15 places in the 2025 Cup of Excellence.
What does Apaneca-Ilamatepec coffee taste like?
Sweet and velvety, by the official description. The denomination of origin Café Apaneca-Ilamatepec, registered with the Centro Nacional de Registros and owned by the state, covers coffee grown above 900 metres in municipalities of Ahuachapán (among them Apaneca, Concepción de Ataco and Tacuba), Sonsonate (Juayúa, Nahuizalco, Izalco, Salcoatitán) and Santa Ana (Santa Ana, Chalchuapa, El Congo, Coatepeque). It describes a sweet-flower fragrance, notes of cacao and a lactic quality in the mouth: a sweet coffee “with character”, with a velvety body and soft acidity, Marcasur reports. Its competition coffees show what the high farms can do. Finca La Pacaya, at about 1,800 metres in the north of Sonsonate, says its soil, altitude and climate give its Geisha a citric acidity combined with a balanced body and acidity; that Geisha won the natural category of the 2025 Cup of Excellence with 90.30. Los Naranjos, above 1,750 metres, took third in the washed and honey category with a honey Geisha at 90.02. Perfect Daily Grind calls Santa Ana, in this range, the region of greatest size, renown and history.

Varieties and altitude
In 2016 the range grew 64.2% Bourbon, 25.6% Pacas and 10.2% other varieties, at 500–2,365 metres, the CSC told the ICO, the widest altitude range of any Salvadoran region. Pacas, a dwarf mutation of Bourbon, was discovered in 1949 on a farm owned by the Pacas family in the Santa Ana region, and El Salvador’s coffee research institute began selecting it in 1960, World Coffee Research says. Today it makes up about a quarter of the country’s coffee.
Smallholders under pressure
In the range’s south, around Jujutla in southern Ahuachapán, small growers with one or two hectares have been abandoning coffee or selling land. Since 2023 the environmental fund FIAES and a local women’s association have helped restore 105 hectares of coffee forest there, planting more than 53,000 coffee plants, El Diario de Hoy reports.
