Einspänner
What an Einspänner is: strong black coffee in a tall glass under a thick cap of whipped cream, drunk unstirred. How to make one, and the coachmen story.
What is an Einspänner?
An Einspänner is a Viennese coffee: strong black coffee, often a double espresso or Mokka, served in a tall glass, sometimes with a handle, under a thick cap of whipped cream. You don't stir it; you drink the hot coffee through the cold cream. It's named after Vienna's one-horse carriages.
Ingredients
- 1 double shot or a short cupstrong black coffee (a double espresso or short, strong filter)
- a thick layerwhipped cream
- a dustingcocoa powder (optional)
Method
Brew the coffee
Brew a strong hot coffee, such as a double espresso or a short, concentrated filter, into a tall glass.
Float the cream
Let whipped cream slide gently off the back of a teaspoon held just over the coffee, so it forms a thick layer on top.
Dust it
Add a little cocoa powder on top if you like.
Drink without stirring
Don't stir. Drink the hot coffee through the cold, sweet cream.
An Einspänner is one of Vienna’s coffee house classics: strong black coffee in a tall glass, often with a handle, under a thick cap of whipped cream, sometimes dusted with cocoa. You don’t stir it. The pleasure is drinking the hot, bitter coffee through the cold, sweet cream. The name means a one-horse carriage, and the drink comes with a story about the men who drove them. Here’s how to make one, and how much of that story holds up.
The short version
- Strong black coffee, often a double espresso, in a tall glass.
- A thick layer of whipped cream on top, maybe a little cocoa.
- Never stirred: hot coffee through cold cream.
- Named after Vienna’s one-horse carriages and their drivers.
- Hot or cold: Tasting Table says it’s now served both ways.
What’s in an Einspänner?
Coffee and cream. The sources describe the coffee slightly differently:
| Coffee | Source |
|---|---|
| Strong black Mokka in a tall glass, topped with whipped cream (Schlagobers) | Vollpension |
| Espresso, usually a double shot, with whipped cream and a dash of cocoa | Tasting Table |
| A strong hot coffee: a double espresso or a short, concentrated filter | Barista Magazine |
| Coffee in a glass with a handle and whipped cream | Time Travel Vienna |
Tasting Table adds that some people sweeten it with brown, vanilla or powdered sugar.
How do you make an Einspänner?
Barista Magazine’s method:
- Brew a strong hot coffee into a glass: a double espresso, or a short, concentrated filter.
- Float the cream. Let whipped cream slide gently off the back of a teaspoon held just over the coffee, as you would for an Irish coffee.
- Dust with cocoa for extra sweetness, if you like.
- Don’t stir. Enjoy the contrast of cold, sweet cream and hot, bitter coffee.
Where does the name come from?
Vienna’s one-horse carriages. The coachmen story is told in several versions, and the sources don’t agree on the details:
| Story | Source |
|---|---|
| Coachmen waiting for fares on cold nights needed something warm; the cream kept the coffee hot, and the handled glass let them hold it while holding the reins. Barista Magazine calls this “according to legend” | Barista Magazine |
| The cream insulated the coffee in winter, or cooled it so drivers could finish quickly for a new fare, and stopped it spilling; a double shot gave extra energy | Tasting Table |
| The cream let a coachman slurp the hot coffee quickly through it when a customer arrived | Barista Magazine |
| After the First World War, food was so short that drivers could only drive with one horse, an Einspänner; they held the horse in one hand and the coffee in the other | Time Travel Vienna |
| The drivers could hold the glass in one hand while steering the horse with the other | Vollpension |
None of these can be proven, so treat them as tradition. Time Travel Vienna adds that in Vienna, Einspänner can also mean half a pair of sausages.
Einspänner vs other coffees

- Irish coffee: hot coffee and whiskey under floating cream.

Questions & answers
What does Einspänner mean?
A one-horse carriage. Barista Magazine says the drink is named after the coachmen of Vienna's single-horse carriages, the taxis of their day. Time Travel Vienna adds that in Vienna the word can also mean half a pair of sausages.
Why is an Einspänner topped with whipped cream?
The story goes that the cream kept the coffee warm for coachmen waiting in the cold, Barista Magazine says. Tasting Table adds that it stopped the coffee spilling, and let drivers cool and finish it fast when a fare arrived. Barista Magazine calls the story a legend.
Should you stir an Einspänner?
No. Vollpension's most important rule is not to stir it: the idea is to drink the hot coffee through the cool whipped cream, and Barista Magazine says the same.
Can an Einspänner be served cold?
Yes. Tasting Table says it can be served hot or cold, and that some people sweeten it with brown, vanilla or powdered sugar.
What is the difference between an Einspänner and a Melange?
An Einspänner is black coffee under whipped cream, in a glass; a Wiener Melange is coffee with warm milk and milk foam. Vollpension lists both among Vienna's classics.
