Espresso drinks
The drinks in this chapter start with espresso and change it only a little: a shorter or longer shot, a double, hot water added, a spot of milk foam, or sugar whipped into a crema. They are served small and taste mostly of the coffee itself.
What are espresso drinks?
Espresso drinks are coffee drinks built on one or more shots of espresso. Some change the shot itself, like a ristretto (shorter) or lungo (longer); others add a little hot water, as in an Americano, or a small amount of milk, as in a macchiato or cortado.
Drinks in this chapter
- D 008Café CubanoCafé cubano, or Cuban coffee, is strong, dark-roast coffee from a moka pot or espresso machine, sweetened by beating the first drops with sugar into a thick, pale foam called espumita, then pouring in the rest.
- D 004Caffè AmericanoAn Americano is espresso diluted with hot water, giving a drink close in strength to filter coffee but with espresso's flavour.
- D 007CortadoA cortado is a small Spanish espresso drink: equal parts espresso and warm milk, about 4 oz in all, with the milk steamed only to temperature, without much foam.
- D 006Espresso MacchiatoAn espresso macchiato is a shot of espresso "marked" with a small amount of milk and milk foam.
- D 005Long BlackA long black is a double espresso poured over hot water, usually 100 to 120 ml, so the crema floats on top.
- D 009Red EyeA red eye is a cup of drip or filter coffee with a shot of espresso added.
